This recipe took about 30 minutes to prepare, and 3 1/2 hours to slow cook. It is very easy and best of all a healthy soup with very much-needed nutrients and spices that feel like a warm hug in your tummy!

Tools You Need For This Recipe

Ingredients (1st list)

  • 2.5 lbs sweet potatoes
  • 900 ml no-salt chicken broth
  • 1/2 cup water
  • 1/3 onion, chopped
  • 2-3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

Ingredients (2nd list)

  • 1 3/4 cups unsweetened cashew milk
  • 1/3 cup natural peanut butter
  • 1/3 can of tomato paste, no-salt if possible

To garnish

  • unsalted peanuts, halves
  • green onion, chopped


  1. Peel and wash the sweet potatoes, then cut them into about 1-inch pieces.
  2. In your slow cooker, combine all the ingredients listed in the first ingredient list.
  3. Cook on HIGH for 3 1/2 hours.
  4. Once the 3 1/2 hours have passed, using a potato masher, mash the sweet potatoes.
  5. Add all the ingredients listed in the second ingredients list and combine well.
  6. Cook for another 30 minutes on HIGH.
  7. Top with peanut halves and chopped green onion. Enjoy!
