Healthy Pancakes Recipe
The sound of “pancakes for breakfast” first thing in the morning has always excited me!
There are so many combinations and so many ways you can make pancakes fit into a healthy meal plan.
For these pancakes, I used Quaker Quick Oats, which I ground in my electrical grinder (favourite kitchen tool btw!).
I mean, there’s nothing wrong with buying oat flour, I just think that making your own saves money and pantry space!
For the “sweet” part, (cause what’s pancakes without a bit of a sweetener?) I used a medium ripe banana.
Adding bananas to your breakfast pancakes will make you feel fuller, and longer and give you an energy boost that will last for hours!
Of course, every pancake recipe calls for eggs, so I threw a couple of them in the as well!
Tools You’ll Need
- Electric Grinder (I use it to ground fresh flaxseed as well!)
- Spatula
Ingredients
As mentioned earlier, this healthy pancakes recipe calls for just 4 ingredients.
- 1 medium banana, ripe
- 2 eggs
- 1 tsp vanilla extract
- oat flour
Toppings
- I topped these pancakes with berries, but feel free to go nuts with this recipe!
Et voila! Super easy, super quick, super tasty.
Customize Your Healthy Pancakes
What I love the most about pancakes is that you can let your imagination run wild with the batter combos.
Here are a few ideas:
Mix-ins:
- nuts such as pecans, chopped walnuts, sliced almonds, etc.
- fruit such as sliced apples, blueberries, blackberries, etc.
- seeds such as chia, flaxseed, hemp, etc.
- mix up the flavor by adding cocoa powder or powdered peanut butter.
Toppings:
- nut butters such as peanut butter, almond butter, cashew butter, etc.
- fresh fruit such as berries, melons, oranges, etc.
- sweeten the deal with maple syrup.
- spice things up by sprinkling some Ceylon cinnamon.
Change up the size:
- Make ’em small or make ’em big! Mini pancakes are pretty adorable!
Instructions
- In a medium-sized bowl, mash the banana, making sure you get all the clumpy parts.
- Crack the two eggs in that same bowl, and mix well until combined.
- Add the vanilla extract. Mix well.
- If you don’t have oat flour, ground some quick oats and make your own. Otherwise, in a large-sized bowl, add the oat flour.
- Add the oat flour into the banana-egg-vanilla mixture and mix until smoothly combined.
- Grease a pan. (I use coconut oil)
- Pour some batter to form your pancakes, making them as big as you want.
- Let each side cook for about 20 seconds.
- Top with berries and enjoy!
