I have been obsessed with healthy pancakes for breakfast lately!

I mean, can you blame me?

Who doesn’t love pancakes for breakfast?!

What I love most about these pancakes is that they take no time to put together and they fill you up with so much energy!

They’re also very filling since they are made with oat flour, which is high in protein.

For this healthy chocolate pancakes recipe, you will need 5 simple ingredients only!

I love keeping it simple yet to the point!

Ingredients

As mentioned earlier, this healthy chocolate pancakes recipe calls for just 5 ingredients.

  • 1 medium banana, ripe
  • 2 eggs
  • 1 tsp vanilla extract
  • oat flour
  • organic cocoa powder

Customize Your Healthy Pancakes

What I love the most about pancakes is that you can let your imagination run wild with the batter combos.

Here are a few ideas:

Mix-Ins

  • nuts such as pecans, chopped walnuts, sliced almonds, etc.
  • fruit such as sliced apples, blueberries, blackberries, etc.
  • seeds such as chia, flaxseed, hemp, etc.
  • mix up the flavor by adding cocoa powder or powdered peanut butter.

Toppings

  • nut butters such as peanut butter, almond butter, cashew butter, etc.
  • fresh fruit such as berries, melons, oranges, etc.
  • sweeten the deal with maple syrup.
  • spice things up by sprinkling some Ceylon cinnamon

Change up the size:

  • Make ’em small or make ’em big! Mini pancakes are pretty adorable!

Instructions

  1. In a medium-sized bowl, mash the banana, making sure you get all the clumpy parts.
  2. Crack the two eggs in that same bowl, and mix well until combined.
  3. Add the vanilla extract. Mix well.
  4. If you don’t have oat flour, ground some quick oats and make your own. Otherwise, in a large-sized bowl, add the oat flour.
  5. Add the cocoa powder and combine well.
  6. Add the oat flour-cocoa powder mixture into the banana-egg-vanilla mixture and mix until smoothly combined.
  7. Grease a pan. (I use coconut oil)
  8. Pour some batter to form your pancakes, making them as big as you want.
  9. Let each side cook for about 20 seconds.
  10. Top with berries and enjoy!
