  1. In a medium-sized bowl, mash 2 hard-boiled eggs, using a fork.
  2. Add the Greek yogurt, mustard, paprika, celery, and onion. Sprinkle chopped parsley and top with black pepper to taste.
  3. In a different medium-sized bowl, mash the avocado, using a fork.
  4. Mix the avocado in with the egg salad.
  5. Spread the avocado egg salad onto the slices of bread.
  6. Enjoy!
