A couple of weeks ago, my husband had this incredible idea to go for a walk to the fresh produce market.

The fall season is in full swing so I thought that was an exceptional idea! So we put on our sweaters and head out.

The place was full of all sorts of pumpkins and in-season vegetables. I came across this striped squash that I had never seen before. My husband suggested we buy it and create a recipe out of it, and so we did!

The delicata squash also known as a sweet potato squash, is a type of winter squash. It has a subtly sweet flavor that resembles a sweet potato. When cooked, the interior turns into creamy goodness with soft flesh.

Caramelized Delicata Squash Slices Recipe

Ingredients

  • 1 medium-sized delicata squash
  • garlic powder (optional)

Instructions

  1. Start by washing the squash thoroughly. Pat dry.
  2. Preheat the oven to 425 F.
  3. Using a chef’s knife, cut the top and bottom parts of the squash.
  4. Slice lengthwise in half.
  5. Using a spoon, scoop out the seeds and fibers.
  6. Cut each half into 1-inch thick slices.
  7. Line 2 baking sheets with parchment paper.
  8. Bake on the bottom rack for 20 minutes.
  9. Flip, season with garlic powder (optional) then bake for an additional 15-17 minutes. If the slices haven’t fully caramelized yet, leave them in for another 3 minutes.
  10. Enjoy them plain or pair them with your favourite dipping sauce!

A Few Notes…

NO OVERCROWDING OF THE PAN

Use two baking sheets instead. If you overcrowd the pans, the slices will not cook properly, but rather become mushier. Assure that there is plenty of space between each slice!

ROAST THE SQUASH SEEDS AND EAT THEM TOO!

No need to toss those squash seeds! They are 100% edible and incredibly nutritious. Space them out on a different baking sheet and roast them on the middle rack for 15 minutes at 325 F.
